FOOD STYLING – A cake for Lady Gaga
With recipe: Lady Gaga’s gluten-free chocolate cake!!!
One day Swedish Hagabageriet got an assignment to create a cake for Lady Gaga. In the Food Photography and Styling, Oscar the pastry chef will guide us through his creative process – from making the cake itself to the final food styling. I will then show you how I photographed the cake.
Photo shoot:
I was thinking black, with shiny details and scenic light so that the cake would be “the star on the stage”. So I put the cake on a disc of black plexiglass, put up a black cloth in the background and shot all of the photos with a daylight lamp. In some of them I got a little help with a white reflector from the right side.

Recipe:
Lady Gaga’s gluten-free chocolate cake
Smaller than the one we see in the photo.
If you want it to be the same size then you should make a double batch.
Cake:
100 g of melted butter
100 g of melted dark chocolate
250 ml sugar
100 ml rice flour
50 ml potato flour
4 tablespoons of cocoa
1 tablespoon psyllium husks
2 eggs
Mix all the dry ingredients together and then mix in the eggs, chocolate and butter into a smooth paste. Bake in a greased cake ring at 175 C until it is solid but is sticky on the inside.
Let cool until the following day.
Chocolate truffle to spruce up the cake:
150 g of high quality dark chocolate
150 g whipping cream 40% fat
A few drops of honey.
1 tablespoon of normally salted butter
Heat up the cream with the honey, add the chocolate little by little and turn it gently together until all chocolate is melted. Drop in the butter and fold together. Wrap and leave at room temperature until the following day.
If the truffle is too hard when it it time to use it – put it for in the microbe for 10 seconds.
Decorate with fresh berries and melted sugar.
